Soya Tofu & Capsicum Salad

Method
- Chop tofu into 2 inches long and thin pieces. Cut capsicum and tomatoes lengthwise into thin pieces. Remove seeds. Chop coriander leaves.
- For dressing place olive oil, vinegar, crushed garlic in a small bottle with lid and shake it vigorously.
- Mix chopped tofu, capsicum, tomatoes, pepper powder and salt. Pour the dressing over the salad and toss the salad. Garnish with coriander leaves and serve on a bed of red cabbage leaves.
